Chocolate Pudding Series | Decadent Chocolate Coffee Pudding

Sometimes it's okay to indulge, right?  We're wrapping up our chocolate pudding series with a recipe that's delectable!  This chocolate pudding is rich, creamy and smooth.  It's probably the most labour-intensive of our series, but worth it if you want to indulge in a guilty chocolate pleasure!  We adapted the recipe based off of one from The Kitchn, and added coffee for a grown-up flavour.

Ingredients (yields 4 servings):
  • 3 tbsp cocoa
  • 2 tbsp cornstarch
  • pinch of salt
  • 3/4 cup heavy cream (oh yeah!)
  • 2 egg yolks
  • 1 cup milk
  • 1/4 cup coffee
  • 1/4 cup sugar
  • 1/4 cup chocolate chips (approx 50 g)
  • 1/2 tsp vanilla extract

Tip!  Use up the egg whites tomorrow morning in an omelette with spinach and cheese.  Mmmmm!


Method:
  1. Mix dry ingredients (cocoa, cornstarch, salt) in a large, heat-proof bowl.

  2. Add in the cream and whisk until mixture is thick and smooth (almost like chocolate mousse).

  3. Drop in your egg yolks and whisk again until smooth.  Set this aside.

  4. In a saucepan, heat up your milk, coffee and sugar.  No need to boil or anything, it's just to dissolve the sugar.
  5. Once sugar is dissolved and milk is warm, pour about half of the milk mixture into the bowl with the other ingredients, stirring as you add it.

  6. Whisk until smooth again, and then pour this mixture back into the saucepan.

  7. Bring your lovely chocolate pudding to a boil to thicken it.  You'll see it bubbling.  Let it boil for approximately 2 minutes while mixing continuously, and then remove it from the heat.  Do not leave the mixture unattended on the heat, even if your toddler decides to wake up early from her nap.

  8. Drop in the chocolate chips and vanilla and stir vigourously until chocolate is melted.

  9. Transfer pudding to a bowl and cover it with saran wrap.  Make sure the saran is actually in contact with the top of the pudding, so you don't get the pudding skin on top as it cools.

  10. Cool to room temperature, and then refrigerate for a few hours.
  11. Serve with fresh berries and a dollop of fresh whipped cream.

Tip!  If you want a lighter, mousse-like texture, consider whipping up some more heavy cream (!!) and folding it into the pudding.

It's probably not the best idea to eat this for breakfast, lunch and dinner, but make it for your next dinner party! And let us know how many groans of pleasure you hear as your guests enjoy it!

Chocolate Pudding Series | Avocado Chocolate Pudding

Back to our favourite topic...CHOCOLATE pudding! A special thank-you to my sis-in-law for this awesome healthy avocado chocolate pudding recipe. Apparently she has tasted quite a few avocado chocolate pudding recipes and this one reigns supreme! Did you know avocados contain more potassium than bananas? They are loaded with nutrients and healthy fats; so go ahead, dig in!
Creamy and delicious!

Ingredients (makes 2 servings)
  • 1 medium size avocado
    • Remove skin and pit
  • 1/4 cup coconut milk
    • You can use any type of milk you want, but coconut milk tastes soooo delicious!
    • Feel free to add more milk to adjust the consistency of the pudding (I like mine thicker).
  • 2 pitted medjool dates
  • 2 tbsp pure maple syrup
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp pure peanut butter (optional but highly recommended)

Method
  1. Blend all ingredients in a food processor, vitamix or use a hand blender until smooth.
  2. Chill in fridge for a couple of hours.
  3. Enjoy!
    Garnish with shredded coconut to make it look extra fancy!

Chocolate Pudding Series | Sweet Potato Date Chocolate Pudding

There is nothing like chocolatey pudding goodness! In keeping with our healthy chocolate pudding series, today we are featuring a deeeee-licious sweet potato date pudding.
This recipe is vegan, full of fiber, and has no refined sugars! This special treat will surely satisfy those annoying 3 pm chocolate cravings:)

Ingredients (makes 2 servings)
  • 1 cup mashed roasted sweet potato 
    • Bake whole sweet potato for approximately 1 hour at 375 F until soft. Cool, peel off skin and mash.
    • 1 large sweet potato yields approximately 1 cup of mashed sweet potato flesh.
  • 2 pitted medjool dates 
    • You can add in an extra date or two if you want the pudding even sweeter.
    • I purchased mine from No Frills; most grocery stores, bulk food stores and health food stores carry them.
  • 1/4 cup of soy or almond milk 
    • You can use regular milk and if you don't care about the pudding being vegan.
  • 1/2 tsp pure vanilla extract
  • 1/4 cup unsweetened cocoa powder 
Tip! Feel free to add in 1 or 2 tablespoons of coconut oil or peanut/almond butter if you want to add in some healthy fats/calories. I do this for my daughter since she has the metabolism of a hummingbird and needs all the calories she can get. And let's be honest, peanut butter and chocolate is the best combo ever! If your pudding feels too thick, you can adjust the consistency by adding a little more milk.


Method
  1. Blend all ingredients in a food processor, vitamix or using a hand blender until nice and smooth.

  2. Chill in fridge for a couple hours if you prefer it cold.

Chocolate Pudding Series | Chia Chocolate Pudding

What's a girl (or guy!) to do when she has a chocolate craving?  We're kicking off our healthy chocolate pudding series with a recipe for chia pudding!  Chia seeds are packed with fibre, omega-3s, protein, and are a great alternative to gelatin in pudding, especially if you're going vegan.

You can find chia seeds at Bulk Barn, Whole Foods, and other grocery stores.  I found ground chia at my local Loblaws!  Would you believe I used to have my husband grind up chia seeds with a mortar and pestle (I know, am I a pioneer?!)?  He was reaaaaally happy I found already ground ones, haha!


Chia seeds are really neat because they form a kind of gel when you put them in liquid.  You can put them in smoothies, juices, and other drinks to thicken them and add nutritional value.  I haven't tried it, but you can apparently use gelled chia seeds as an alternative to egg in some recipes.  Admittedly, you might find the texture of chia a little bit slimy when you first try it.

Toddler-approved!  Chocolate pudding you don't feel guilty about giving to your kids!

Tip!  If you're afraid of committing to a whole pack of chia seeds, buy just a bit at the bulk food store and put it in some juice to try it out!  Look, you've just made your own Mamma Chia drink for a fraction of the cost!



This dessert is basically choose your own adventure, because it's so customizable!  You can decide what type of milk you want, what type of sweetener to use, and how much you want of each.  You can even switch out the cocoa for vanilla, or steep tea in your milk for a milk tea flavour.  Or maybe even matcha?  Yum!

Ingredients:
  • 1/3 cup chia seeds (ground or whole) - I like ground chia because it makes for a slightly smoother pudding. Whole chia seeds make the pudding slightly crunchy.
  • 1.5 cups milk (coconut, almond, soy...your choice!)
  • 2 tbsp cocoa
  • 2 tbsp honey, maple syrup, or other sweetener (you can adjust the amount according to the demanding needs of your sweet tooth)
Method (this is so easy...you basically just mix everything together in a bowl!):

  1. Mix honey and cocoa with milk.  I took about a 1/2 cup of milk, warmed it, and mixed my honey and cocoa into it.  This dissolves the honey faster, and it's easier to get the cocoa lumps out!

  2. Stir in chia seeds and whisk until well combined.
  3. Refrigerate for a few hours to allow chia seeds to absorb the liquid.
  4. Garnish, serve and enjoy!
Tip! If you want a thicker pudding, add more chia seeds.  Want to make it more of a thick chocolate shake?  Add fewer chia seeds.
